Gochujang Chicken Wings

Alright, I have a confession. I have been having the hardest time writing about my Iceland trip. How do I organize my thoughts into paragraphs? When all I could think is in chapters!  It was definitely a very enriching experience, and I need to take in a while longer to reflect what has changed within me. So meanwhile this little brain is processing, how about some chicken wings? You gotta like this!!!motk-chicken-wings-4  Chicken wings are probably my favorite part of the bird. It has the largest skin to meat ratio , its crispy on the outside and juicy inside, (supposed to) Now I must tell you, there are two types of wing eaters. One who devour the wings with care, leaving a clean sleek bones, and ones who eats it  abruptly leaving some flesh in the corner of the wings wasted. I cry for the second kind. In fact,I get ticked off for sloppy wings job, or any bone jobs for that matter.That’s why normally I get to the wings before anyone else ,make the boo boo. I am serious about my wings.

We don’t generally eat wings very often but lately ever since we shop regularly at our local meat store, I am drawn to buy less popular cuts like lungs, liver and other offal’s. What’s that? I heard your uncomfortable gasps. Yes you! It’s not at all bad; in fact it’s so delicious. I sometimes crave for it, because where I was raised, all parts of animal are used and cooked into delicious dishes, off course bold flavors of spices helps. Thank goodness.  It’s an admirable eating practice, its sustainable, and makes the sacrifice of the animal whole.

Well other than the particular taste that I miss once in a while, I seriously believe men can’t live from organic chicken breast alone! I certainly can’t afford them on a daily basis, and what happened if everyone only cares for chicken breasts?You  will be missing out on all the good parts like wings!

Some would go for the conventional chicken. Believe me, I am hormonal already I don’t need more hormone served on my plate along with the mashed potatoes. It will just make me too feisty.  So eating organic, grass fed less popular cuts and organs works for me.   But off course moderation is always the key because you have to watch out for cholesterol too.


motk-chicken-wings-2Ok, back to the chicken wings, I must say Iam getting really good at making baked chicken wings ( haha) . Good means crunchy, juicy, finger licking delicious chicken wings with no oil splatter all over your shirts, no mess deep fry clean up afterward and the best of all it will make your curtains and walls rejoicing for saving them from the stinky deep fry smell.


After all the trials and errors, I really think vinegar and cornstarch are the ultimate secret to make   the wings skin crispy. Off course the other powerful helper is circulating air, this is why you want to place the wings spaced out evenly, on elevated baking rack when cooking them.

Gochujang Chicken Wings

Serves 2-3
Prep time 15 minutes
Cook time 1 hour
Total time 1 hour, 15 minutes
Meal type Appetizer, Main Dish, Snack
Misc Freezable, Pre-preparable


  • 2lb chicken wings
  • 1 tablespoon white vinegar
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon honey
  • 3 tablespoons gochujang
  • 1 tablespoon Mirin
  • 1/2 tablespoon soy sauce (adjust the amount as you like)
  • 1 teaspoon sesame oil
  • 2 Medium jalapenos pepper (sliced for garnish (optional))
  • 2 tablespoons roasted sesame


Step 1
Pre heat the oven at 400F
Step 2
Splash vinegar and rub the chicken wings let it sit for 15 minutes
Step 3
Pour out the liquid and add salt and cracked pepper
Step 4
Cover chicken wings with cornstarch,
Step 5
Spray the baking rack with olive oil spray, place the wings skin side up
Step 6
spray the chicken wings with olive oil spray
Step 7
Bake until internal temprature is 180F approximately 45-60 minutes
Step 8
Mix the gochujang sauce, with mirin, honey, soy sauce, sesame oil,
Step 9
Drizzle the chicken wings with the sauce,and finish it off with sesame seeds and jalapenos
