Pink Peppercorn + Salt +Strawberry + Mint Chocolate

Strawberry covered chocolate is good, but rather ordinary.Not trying to be snobbish, ordinary is good sometimes. But other times, I like to feel special and elevated. This is when we turn something ordinary to extraordinary. In this case it doesn’t take much, just three extra ingredients. Chocolate mint chips, some crushed and whole pink peppercorn, and my favourite Maldon Salt. All together they make a good marriage, every possible taste you can imagine, there they are.

When I took a bite, the salt awakens me with its grain of wisdom, to open the rest of the palate. The flesh  from the strawberry then explode into this sweet sour concoction that is so fresh and merry. The pink peppercorn adds a little unexpected spiciness to otherwise predictable burst of joy. An unusual story, unique and a little bold. The sour is gone and now the sweet lingers and the  velvety dark chocolate smoothened the previous burst of flavours with elegance and eloquence. A little mysterious ,and  dark, it melts in my tongue. Then I feel the new fresh breath of mint spring on the roof of my mouth. Clean and pure as if we just walked through a garden of luscious green. What a lovely adventure in  a bite. You should try it for yourself.

Strawberry Mint Chocolate with Pink Peppercorn and Salt

Serves 4-5


  • 1 pint fresh strawberries (washed, cleaned and dried)
  • 1/2 cup mint chocolate chips
  • 1 cup 70% semi sweet dark chocolate (chopped thinly)
  • 1 teaspoon pink peppercorn
  • 1 teaspoon maldon salt
  • 2 cups water


Step 1
Prepare the clean strawberry with the leave on, you can do the strawberry whole or in my case I cut it in half so its easier to lay
Step 2
melt the mixture of mint and dark chocolate in a bain marie. Fill a pot with two cups of water and put a heat resistant bowl on top of it, making sure its not touching the water, and the water is simmering not boiling. Pour the chocolate into the bowl,and stir it continuously until all of it its melting and smooth
Step 3
Dip the strawberries into the chocolate mixtures. and Let it rest in in a parchment paper. While the chocolate is still liquid, garnish the top of the strawberries with 2-3 pink peppercorns, and a few maldon salt pieces. You must work fast as the chocolate dried up pretty quickly.
Step 4
Refrigerate untill the chocolate hardens ( around 2 hours), serve immediately. The strawberry covered chocolate would last for a day in the fridge if you cut it in half, but 2 days if you keep it whole
